Chicken & Prawn Fried Rice Recipe Chinese Style (Chinese Rice Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at a early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredient:
400g Cooked Rice
100g Raw Prawns
100g Chicken Breast
50g Carrot
100g Pineapple
50g Cashew Nuts
50g Peas
3 Cloves Garlic
10g Ginger
1 Small Onion
1 Tsp Ground White Pepper
1 Tsp Turmeric Powder
1 Tbsp Cooking Wine
1 Tbsp Fish Sauce
1 Tbsp Sesame Oil
Salt to Taste

Method:
1. Chop the prawns into half, place into a bowl
2. Add pinch of salt, half of the white pepper and cooking wine. Mix well and leave to marinate
3. Finely dice the chicken, then place in a bowl
4. Add pinch of salt, remaining white pepper and cooking wine. Mix well and leave to marinate
5. Finely dice the carrot
6. Chop the pineapple into small chunks
7. Finely chop the onion, ginger and garlic
8. Heat 1Tbsp oil in a wok, add chicken and stir fry for 2 minutes till cooked, remove chicken into a dish
9. Add the prawns in the same wok, stir fry for a minute, remove into a dish
10. Heat 1 Tbsp oil in the wok, add ginger, garlic, onion and cashew nuts, stir fry for a minute
11. Add carrot and peas, stir fry for 2 minutes
12. Add the pineapple and stir
13. Add the chicken, prawns, rice, fish sauce and turmeric powder, stir fry for 2 minutes
14. Add sesame oil and stir
15. Transfer into a dish and serve
