Chinese Braised Cumin Ribs (Chinese Cooking Recipe)

Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.

400g Spareribs
20g Green Pepper
25g Red Pepper
30g Ginger
6 Cloves Garlic
3 Bay Leaves
1 Cinnamon Stick
1 Star Anise
20g Coriander
1 Tsp Chicken Powder
1 Tbsp Ground Cumin
1 Tbsp Cooking Wine
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
Salt to Taste

1. Cut the green and red pepper into bite-size pieces
2. Finely chop the ginger, garlic and coriander
3. Cut the ribs into about 1½ inch chunks
4. Boil 1 litre of water in a pan, place ribs into the boiling water and boil for 1 minute, remove and drain
5. Heat 2 Tbsp oil in the wok, place bay leaves, cinnamon stick, star anise and ginger. Stir and fry for few seconds
6. Add ribs to the pan and stir-fry for a minute
7. Transfer to a saucepan
8. Add cooking wine, light soy sauce and 500ml water into the pan and stir
9. Add dark soy sauce, salt and bring to the boil
10. Cover the pan, cook for an hour on low heat till meat is tender and juice is reduced to minimum
11. Remove the cinnamon stick, bay leaves and star anise
12. Add the green and red peppers, chicken powder, ground cumin. Stir and cook for another minute
13. Add the garlic and coriander, stir and mix well
14. Place ribs into a dish and enjoy
