Chinese Hoisin Beef Stir Fry – Inner Mongolian Cooking Recipe

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
300g Beef Fillet
5 Spring Onions
3 Clove Garlic
5g Ginger
½ Red Pepper
½ Tsp Rice Wine
½ Tsp Light Soy Sauce
½ Tbsp Dark Soy Sauce
1 Tbsp Oyster Sauce
2 Tbsp Hoisin Sauce
2 Tbsp Brown Sugar
1 Tsp Sesame Oil
½ Tsp Coarse Black Pepper
1 Tsp Cornflour
1 Egg White
3 Tbsp Beef or Chicken Stock

Method:
1. Cut beef into thin strips and the place in a bowl
2. Add the rice wine, light soy sauce, 1 Tbsp brown sugar, egg white and cornflour
3. Mix all ingredients together and leave to marinate for 30 minutes
4. Meanwhile, finely chop the garlic and ginger
5. Chop Spring onions into 1 inch in length and keep the white and green part separately
6. Cut the red pepper into strips
7. Place the oyster sauce, hoisin sauce, dark soy sauce, remaining brown sugar, sesame oil, black pepper and stock in a bowl, mix well
8. Heat 1 Tbsp of oil in the wok over high heat
9. Place the beef in the wok and stir-fry for 2 minutes
10.Add ginger, garlic and the white part of the spring onions in the wok and fry for few seconds
11.Add pepper strips and stir-fry for a minute
12.Add the sauce mixture from above, stir and cook for further minute
13.Add the green part of the spring onions and stir-fry for 10 seconds
14.Remove from wok and enjoy
