Chinese Mini Salmon Skewers in Curry (Asian Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

350g Salmon Fillet
1 Red Onion
1 Red Chilli
3 Cloves Garlic
5g Ginger
1 Banana
150g Cucumber
1 Tbsp Lime Juice
2 Tbsp Lemon Juice
3 Tbsp White Wine
½ Tsp Ground White Pepper
2 Tbsp Olive Oil
2 Bay Leaves
1 Tsp Star Anise Powder
2 Cloves
1 Tsp Turmeric Powder
½ Tsp Chilli Powder
½ Tsp Cinnamon Powder
1 Tbsp Curry Powder
Cocktail Sticks
Salt to Taste

1. Finely dice the onion
2. Finely chop the chilli and thinly slice the garlic and ginger
3. Cut cucumber and banana into about 3mm thick slices
4. Cut salmon into 1-inch cubes and place into a bowl
5. Add a pinch of salt, lime juice, white wine, white pepper. Mix well and leave to marinate for 5 minutes
6. Heat 1 Tbsp of the olive oil in the wok
7. Add onion, ginger, garlic, chilli, bay leaves, star anise powder, cloves, turmeric powder, chilli powder, cinnamon powder and curry powder. Fry for a minute
8. Add water, bring to the boil and then simmer for 10 minutes
9. Place the contents into a processor, process to a smooth sauce
10. Heat the remaining olive oil in a frying pan
11. Add the salmon to the pan and fry for a minute, turning twice during this
12. Place a slice of banana and cucumber onto each piece of salmon, use a cocktail stick to keep them in place
13. Pour the sauce over the salmon and bring to the boil
14. Transfer onto a dish, drizzle with lemon juice and serve
