Chinese Onion & Cardamom Steamed Rice (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
500g Rice
8 Green Cardamom Pods
100g Onion
1 Tbsp Lemon Juice
Salt to Taste

Method:
1. Finely chop the onion
2. Lightly crush the cardamom pods to make them crack
3. Wash and rinse rice till the water is clear
4. Heat 2 Tbsp oil in the saucepan, add onion and cardamon. Fry on medium heat till onion is soft
5. Add rice, stir and fry for 2 minutes
6. Add 1½ litres of cold water, salt and the lemon juice. Bring to the boil
7. Boil rice for 5 minutes, stirring occasionally. Remove from heat and drain
8. Place the drained rice in a steamer and steam for 20 to 25 minutes till cooked
9. Transfer to a dish and serve
