Chinese Pork (Cloudy) Jelly (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

1kg Pork Skin
4 Cloves Garlic
1 Spring Onion
½Tsp Ground White Pepper
3 Tbsp Light Soy Sauce
1 ½ Tbsp Dark Soy Sauce
1 Tbsp Sesame Oil
2 Tbsp Vinegar

1. Finely chop the spring onion and garlic, and then place in a bowl
2. Add the soy sauce, sesame oil, vinegar, pinch of salt, and white pepper. Mix together
3. Place the pork skin in a large pan, add water to the pan so the water level is just cover the skin
4. Bring it to the boil and then continue to boil for 5 minutes
5. Remove the skin from water and leave to cool
6. Remove the fats (the white part inside of the skin) from the skin, and then cut the skin into strips, rinse the skin strips with warm water and drain
7. Place the skin strips in a large pan, add 2 litres of cold water, bring to the boil
8. Turn heat to low, cover and cook until the liquid became milky in colour
9. Turn off the heat, empty the liquid into a deep dish, leave to cool down and then place in a fridge for overnight to set firmly
10. Slice the cloudy jelly into ½cm thin slices, place on a dish, pour the sauce over, garnish with coriander and serve
