Chinese Spicy Beef Sauce For Noodles or Rice (Asian Style Cooking Recipe)

Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.

250g Lean Beef
300g Yellow Bean Sauce
3 Cloves Garlic
2 Spring Onions
5g Ginger
150g Red Pepper
10g Chilli Flakes
25g Sugar

1. Finely chop the spring onions, garlic and ginger
2. Cut the red pepper into thin threads, and then cut into small cubes
3. Slice the beef into ½cm slices, then cut into ½cm threads, finally cut into small cubes
4. Heat 2 Tbsp oil in the wok over medium heat
5. Place the beef in the wok, stir and fry for 3 minutes or until turned pale
6. Add the red pepper, chilli flakes, garlic, ginger and spring onion. Stir-fry for 2 minutes
7. Add the bean sauce, stir and fry for few seconds, then add 100ml boiling water and stir
8. Turn heat to lowest setting, simmer until the sauce thickens and bubbling – stir occasionally to avoid burn to the bottom
9. Add the sugar, stir and continue to cook for a minute
10.Place the sauce into a dry glass jar and secure the lid
11.Turn the jar upside down and leave for 30 minutes or more
12.Store in a cool and dry place (maximum of storing for 2 weeks), warm up and serve with noodles or rice of your choice
