Chinese Spicy Cumin Lamb (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

450g Lean Lamb
1 Spring Onion
10g Ginger
10ml Cooking Wine
10g Cumin Powder
5g Hot Chilli Powder
20g Toasted Sesame Seeds
Salt To Taste

1. Thinly chop the spring onion and ginger
2. Cut the lamb into thin slices and place in a large bowl
3. Add the spring onion, ginger, 2 Tbsp oil, cooking wine, pinch of salt (optional) into the bowl, mix well and leave to marinate for an hour
4. Place the cumin and chilli powder in a small bowl, mix together
5. Heat a litre of oil in the wok over high heat
6. Place the lamb into the hot oil, deep fry 4 minutes until light brown, remove and drain. Discard the oil
7. Place 2 Tbsp of oil in the wok, add chilli and cumin powder, heat over medium heat for few seconds
8. Add the lamb, sesame seeds, salt to taste and then stir well
9. Transfer to a dish and serve hot
