Cooking Stir Fry Chicken & Green Beans @ Home (Chinese Style Recipe)

Welcome to Asian Cooking @ Home – My name is Xiao Wei, ever since my Mother taught me how to cook at a early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredients:
400g Chicken Breasts
300g Green Beans or Runner Beans
3 Cloves of Garlic
5g Ginger
1 Tbsp Sesame Oil
1 Tbsp Rice Wine
1 Tbsp Light Soy Sauce
1 Tsp Ground Sichuan Pepper
1 Tsp Cornflour
20ml Water Mixture
Salt To Taste

Method:
1. Cut the green beans into 1 inch in length pieces
2. Finely the chop ginger and garlic
3. Slice and then cut chicken into thin strips and place into a bowl
4. Add rice wine and pinch of salt into the bowl, mix well
5. Boil 500ml of water in the pan, place green beans into the boiling water and blanch for 2 minutes, remove and drain
6. Heat half Tbsp of oil in the wok on high heat
7. Place chicken into the wok, stir fry for 5 minutes, remove from wok
8. Heat another half Tbsp oil in the wok
9. Place ginger, garlic and Sichuan pepper into the wok, fry for few seconds
10. Add green beans, chicken and soy sauce, stir fry for a minute
11. Pour in the cornflour mixture and stir quickly
12. Add salt ans sesame oil and stir for few seconds
13. Transfer into a dish and serve
