1 lb. boneless skinless chicken breasts
Lime Juice (from 2 limes)
1 packet of taco seasoning
1/2 cup of cilantro
1 teaspoon onion powder or dried onions (or to taste)
1 teaspoon cayenne pepper (or to taste)
1 teaspoon black pepper (or to taste)
1/2 cup of water
Add everything to Crock-Pot. Cook on high for about 4 hours. At some point during the cooking process, you can flip chicken over and stir the mixture but you don’t have to…it will still come out fine! Once the chicken is fully cooked and tender, shred it all up, return it to the crockpot, and stir. Leave it on “keep warm” or “low” for about 20 more minutes to allow the juices/liquid to further flavor the chicken. Enjoy it on a salad, on a taco, as enchilada filling, whatever you can dream up! =)
