2 cups Maida (All purpose Flour)
1/4 cup Walnuts
1 cup Sugar
11/2 tsp Baking Soda
1 tbsp Vanilla essence
1 cup deseeded & chopped Dates
11/2 cup Milk
1 cup Oil
1 cup grated Carrots
1 tsp mixed Spices (equal quantities of Cinnamon/Cloves/Nutmeg)
— In a blender, combine Sugar and Milk, till the Sugar dissolves completely.
— Add Oil, mix well and keep aside.
— In a bowl combine together Flour, Baking Soda and Spice powder.
— Pour the wet ingredients into this bowl and mix well.
— Add Vanilla essence, Dates, Walnuts and grated Carrots and mix well.
— Pour this batter into a prepared Cake tin.
— Bake at 180 degrees C for 45-50 minutes.
— Insert a skewer to check whether Cake is done.
— Cool, cut and serve.
