Egg curry is a very popular dish amongst the egetarians. This type of gravy we get in the dhabas with tandoori rotis. Prepare it at home and eggs were cooked in a spicy onion-tomato gravy. The sweetness from onion and tomatoes blends exotically with the Garam masala and spice powders. The more the onions were, the tastier the dish turns out to be. A wonderful mix of sweetness and spiciness leaves through the tongue at every spoonful of rice and egg curry is suppose to be the tastiest gravy according to my is simple and yet taste like dhaba also try it and enjoy the flavours for which we go to dhabas.

Ingredients

Boiled egg …………………………………… 2
Tomato ( pureed) ..……………… 4 (boil and run in a mixer )
Onion …………………. 1 large onion
Ginger garlic ……………… 2 tsp
Whole garam masala ………………….. 2 bay leaves, few black peppers, 1 green cardamom, 3 Cloves, 1 inch cinnamon stick
Red chilli ………………….. 3 tsp
Coriander …………………. .2 tsp
Garam masala powder…………………1/2 tsp
Turmeric …………………..1/2 tsp
………………….. ..to taste
Green coriander leaves ……………… few

Method

1) Boil egg for 10-12 min.

2) Boil tomatoes for 5-8 min,peel the skin grind to a paste,run through a sieve.

3) Put a wok add oil,make a slit in eggs and fry till light them & keep aside .

4) Put bay leaf,cinnamon stick,green cardamom, black pepper & cloves,add onion and fry till it truns little ginger & garlic ,turmeric powder ,coriander powder and red chilli powder add little bit of water and tomato paste & add on medium flame till oil eggs and cook for 2-3 min. Add garam masala water to get the req the lid& cook for 3-4 min.

5) Garnish with coriander hot with rotis or tandoori rotis.
