I love Salmon & eat it once a week without fail. I’m going to make a bunch of easy salmon recipes, including salmon pasta recipes like this one – Salmon with Broccoli & Spicy Noodles.

This pan seared salmon recipe is quick, easy & delicious. Simply add more or less chilli depending on how hot you like it 🙂

INGREDIENTS (Serves 2)

2 salmon fillets (Bones & skin removed)
salt & pepper
1 tablespoon olive oil
½ red chilli – finely chopped
½ inch piece of ginger – finely chopped
2 garlic cloves – finely chopped
Large handful of lightly cooked broccoli florets – Steam for 2 minutes
Large handful of fresh spinach
Zest of 1 lime
Pre-cooked noodles – enough for 2 people
½ pint of fish stock
1 lime

INSTRUCTIONS

STEP 1: Heat the oil in a large pan over a medium heat. Season the salmon with salt & pepper, & fry for 2-3 minutes on each side. Make sure the salmon is still pink in the middle. Set aside in a warm place.

STEP 2: Using the same pan, fry the chilli, ginger & garlic until lightly coloured.

STEP 3: Add the broccoli, spinach & lime zest. Stir fry for 2 minutes.

STEP 4: Add the noodles & stock. Bring to the boil and simmer for 2 minutes.

STEP 5: Serve the salmon on the spicy broccoli noodles with a wedge of lime.
