Today I am making Watermelon Cheesecake…It is so creamy and bursting with Watermelon Flavors! Another awesome Summer Dessert and no Oven required!!
1 cup graham cracker crumbs
1 tbsp white sugar
4-5 tbsp unsalted butter, melted
Green Food Coloring
1 (8 oz) package cream cheese, softened
1 (3 oz) package watermelon jello
1 ( 14 oz) can sweetened condensed milk
1/2 cup watermelon juice
1/2 tsp lemon extract
Red Food Coloring, optional
1 cup fresh whipped cream
Dark Chocolate Chips, for top
Whipped Cream, optional
For the Crust: Preheat Oven to 350 Degrees
In a medium bowl, add all ingredients together and stir until well combined (like wet sand). Press down into a 9-inch Pie Dish; Bake for 8-10 Minutes. Remove from the Oven and cool completely.
For the Filling
In a large bowl, add cream cheese and jello; beat until creamy and well combined. Next add sweetened condensed milk and cream again until combined. Add 1/2 of the watermelon juice and blend in then add other half. Then add lemon extract and red Food Coloring (if using) and beat in…Food in whipped cream. Pour Filling into cooled crust, place in the refrigerator overnight until firm. The Next Day, add Chocolate Chips on top and serve with whipped cream.
