Gobhi Musallam
Serves- 2-3
Ingredients-
Cauliflower (gobhi)- 1 whole
Khoya- 1 cup
Chopped almonds- 1/2 cup
Onion paste-1 cup
Tomato puree- 1 cup
Ginger garlic paste- 1tbsp
Turmeric powder- 1 & ½ tsp
Red chili powder- 1 & ½ tsp
Coriander powder- 1 & ½ tsp
Cumin powder- 1 & ½ tsp
Cashew & magaz (watermelon, melon & pumpkin seeds) paste- 1 tbsp
Poppy seeds paste (khas khas)- 2 tsp
Fried brown onions (caramelized)- 1/3 cup
Water –2 cups
Slit green chilies- 2-4
Salt- to taste
Fresh cream-for garnish
Oil – for deep/medium frying
Ghee – 2 tbsp

Method –
Wash the entire cauliflower well.
Stuff it with khoya and chopped almonds(in between the florets) and fry. Keep aside.
In a deep bottomed pan, heat ghee and add the onion paste & cook.
Add tomato puree & cook well.
To this add ginger garlic paste & cook. Then add the dry spices & cook them.
Now add the cashew nut & magaz paste, poppy seeds (khas khas) paste & mix well.
Add fried brown onions (caramelized), water & stir well.
Add slit green chilies & salt to taste.
Add the fried cauliflower. Paste it with the gravy & adjust the consistency of the gravy.
Let it simmer & cook till done.
Garnish with fresh cream, fried brown onions and slit green chilies.
Serve with rice or roti!
