Mexican Stuffed Peppers | Oil Free | Meal Prep Recipe | Post Workout Meal, Vegan Weightloss

HI loves! I am back again with another great meal prepping recipe. These stuffed pepper’s are perfect for lunch for school or work. THey also make a great post workout meal. They are fast to put together and delicious!

MEXICAN STUFFED PEPPERS

Serves 3-6

Ingredients
1 tsp minced garlic
1 small sliced onion
1 c Rice of your choice
1 c cooked quinoa
1 can black beans rinsed and drained
1/2 c diced roma tomatoes
1 c corn
1 c spinach
1 tsp sazon
1/2 tsp cayenne
1 tsp cumin
3 large bell peppers

1. Pre heat oven to 450’F. Cut peppers in half and deseed them. Place them in baking dish and set aside.
2. In a large saucepan saute onions and garlic. Add remaining ingredients and cook for 2-3 minutes.
3. Fill peppers and place back in baking dish. Cover tightly with foil and bake for 20-30 minutes or until peppers are tender.

CILANTRO LIME DRESSING

Ingredients
1/2 c cilantro
1/2 tsp minced garlic
1 avocado
1 tbsp lime juice
Salt & pepper to taste
Water

1. Blend all ingredients in blender until creamy and smooth {add water based on how thick you want the dressing to be”
