Mexican Style Grilled Corn on the Weber Kettle – Elote Recipe

This is the best Grilled Corn to eat. Charred Corn with Lime and Chilli Mayonnaise, covered with cheese and more chilli. An absolutely fantastic recipe

The Corn is grilled in foil boats and is smothered in butter. They are grilled at around 300f until the corn has plenty of char.

I made my own Mayo and added
– Lime Zest
– Juice of 1/2 Lime
– 1 1/2tsp of chilli (add in smaller amounts for your taste)

Spread the Mayo onto the Corn and then roll in the grated cheese. I used Parmesan but you can use Cotija Cheese, if you are lucky enough to be able to get some.
Sprinkle a little more chilli and a dash of Lime Juice before serving.

This really is the best 🙂
