Moroccan almond stuffed Msemen (fried cake) recipe

Msemen or R’ghayf is a fried almond cake, a specialty of Eid al-Fitr in Morocco. A crispy cake stuffed with almonds and covered in honey just like my grandmother taught me.

Cake dough

2 pound flour (1kg)
4 tablespoon finely crushed sesame
1 tablespoon of finely crushed fennel
1 tablespoons of orange blossom water
3 tablespoons white vinegar
2 egg yolks
1/2 cup of melted butter
Some saffron
some nutmeg
Some salt and sugar
7g of baking powder
Warm water according to the dough

1 pound sweet almonds (500 g)
1/2 pound caster sugar (250 g)
1/4 teespoon frankincense powder
1 tablespoon orange blossom water
1 tablespoon butter

For decoration
Sesame seeds
