Recipe : Porcini Mushroom Risotto
Ingredients : Dried porcini mushrooms. 10 grams
Butter. (unsalted) 50 gm
Olive oil. 30 ml
Small onion (peeled and finely sliced)
Rice (Arborio, or Carnarolli ) 300 grams
Dry white wine. 1/3 cup
Veg Stock. 900ml
Parmigiano-Reggiano (freshly grated) 50 grams
parsley (flat-leaf, minced leaves) 10gm
Salt. To taste
Freshly ground black pepper.
