Easy to make and absolutely yummy, these Shikampuri Soya Kebabs are the perfect combination of health and taste.
1 cup soya granules
1 cup chopped boiled carrots
1 cup chopped boiled beans
1 cup chopped boiled cauliflower
3 potatoes boiled and grated
4 tsp oil
2 green chillies finely chopped
1 tsp finely chopped ginger
1/2 tsp turmeric
2 tsp red chilli powder
1 tsp chopped coriander
1 tsp chopped mint
salt to taste
2 fresh bread slices – grind in a mixer to get fresh bread crumbs
garam masala powder
1/2 cup dahi
1 onion chopped
Heat oil in a kadhai, add ginger and green chillies. Let ginger turn golden.
Add carrots, beans, cauliflower. Stir fry for 2 minutes. Add turmeric and chilli powder. Stir fry for a few seconds.
Add grated potatoes and mix well.
Add salt, coriander and mint leaves. Add all the dried masalas. Cook for about 5 minutes till the mixture is well blended. Remove from heat.
Add bread crumbs to make firm round balls .
For the filling, brown the chopped onions in 1 tbsp oil on low heat. Remove from heat and let it cook. Add all the ingredients of the filling and mix well.
Flatten balls, stuff filling and shape into kebabs.
Shallow fry in a pan in 2-3 tbsp oil till crisp and golden brown.
