Strawberry Japanese Cotton Cheesecake – Cotton Cheesecake Recipe

Here is a simpler and easy way to bake a Japanese Cotton Cheesecake. I decided to add a fresh strawberry puree for a colorful and tasty swirl of flavor. The texture is a cross between a fluffy soft angel food cake and a silky cheesecake.

INGREDIENTS
8 oz block of Softened cream cheese
4 tbls softened unsalted butter
5 egg yolks
1 tsp vanilla extract
1/3 cup heavy cream (or whole milk)
1/2 cup granulated sugar
1/4 salt
5 chilled egg whites
1/4 tsp cream of tartar

Strawberry Puree
2 cups chopped strawberries
1 to 2 tsp sugar
pinch of salt
3 tbls fresh squeezed juice of an orange

**8 x 3 inch round cake greased and lined with parchment paper
**Bake @ 325 degrees Fahrenheit for 1 hour and 10 minutes
