Sweet & Sour Crispy Pork (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at a early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

300g Pork Fillet
50g Potato Starch
2 Tbsp Sugar
2 Tbsp Malt Vinegar
1 Tsp Cooking Wine
80g Carrot
1 Spring Onion
5g Ginger
3 Cloves Garlic
Salt to Taste

1. Slice and then cut ginger into thin threads
2. Cut the white part of the spring onion into thin threads
3. Thinly slice and then cut carrot into thin threads
4. Slice and cut garlic into thin threads
5. Thinly slice the pork and place in a large bowl
6. Add half of the cooking wine and pinch of salt, mix and leave to marinate for 10 minutes
7. Place potato starch and 40ml water into a bowel, mix into smooth paste
8. Pour the paste onto the pork and mix well for an even coverage
9. Place sugar, vinegar, pinch of salt, the remaining cooking wine into a small bowel and mix well
10. Heat 1 litre of oil in a wok
11. Place pork one piece at the time, deep fry until floating and golden, remove from oil – do it in batches if needed
12. Allow the oil to heat for another minute or so
13. Return all of the pork in the wok and deep fry for a minute, remove and drain. Discard most of the oil but leave small amount in the wok
14. Return wok onto the cooker on high heat
15. Place the spring onion, ginger, garlic and carrot into the wok, stir for few seconds
16. Add the sauce made earlier and stir
17. Add the pork and stir fry for a minute
18. Transfer onto a dish, garnish and enjoy
