—Fajita Pizza Twists

Ingredients:

2 pizza bases
4 chicken breasts, diced
1 red onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 packet fajita seasoning
mozzarella cheese, grated
sour cream, salsa and chives, to serve
olive oil
S+P

Method:

Roast your chicken, peppers and onion with the seasoning, oil and salt for about 20 minutes in an oven pre-heated to 200degs. Once cooked, chop up finely and leave to cool. Now lay down a pizza base on a prepared tray. Cover the base with your chicken mix leaving a small circle in the middle of the base. Cover with mozzarella cheese, then another pizza base. Press down lightly, then place a small glass or cup in the middle of the pizza and cut from the middle outwards in a spiral formation. Twist these individual ‘slices’ until all are done, then remove cup/glass and bake at 200degs for 15-20 minutes. Dump your sauces and chives in the middle of the ‘pizza’, then go nuts! Enjoy!

—Pizza Burrito:

Ingredients:

Pizza base
Tomato sauce
200g cooked chicken
200g grated Mozzarella
200g bacon

Method:
Layer your pizza base with sauce, the cooked chicken, and the mozzarella. Then bake for 15 minutes. Remove from oven and roll into a cylinder. Freeze then for 20 minutes (this will help the burrito keep its shape). Remove from the freezer and wrap your rolled pizza in bacon, making sure that the outside of the roll is fully covered. Return to the freezer for a further 20 minutes. Once again remove from the freezer and place into a hot oven for 30/40 minutes, until the bacon looks nice and crisp. Once cooked, slice and enjoy. Pizza burrito perfection.

—Nacho Lasagne:
Ingredients:

500g beef chilli
1 large packet of Doritos (flavour of your choosing)
300g grated cheddar
2 flour tortillas
Jalapeños
Sour cream (to serve)
Salsa (to serve)
Spring onions (optional)

Method:

Grab yourself a non stick baking dish. Start by laying a base layer of chilli, then Doritos, then cheese. Now place two corn tortillas on top of mix and press down, this ensures the final dish holds its shape. Now repeat the chilli, Doritos and cheese layers. Finally top with jalapeños and bake the whole dish at 180 degrees Celsius for 25 minutes. When out of the oven, serve up individual portions and top with sour cream, salsa and spring onions. It tastes even better than it looks. Enjoy.

Ingredients:
6 large potatoes
4 large chicken breasts (cooked and shredded)
Bbq sauce
200g grated cheddar
200g grated red leicester
Ranch dressing
Sriracha
Spring onion

Method:

Prick your potatoes and lay them on a baking tray. Drizzle in olive oil and sprinkle with salt, then bake for 45 minutes. When cooked and slightly cooled, slice the potatoes in half and remove the inside (save for mash). Lay your potato skins on a baking tray and fill with chicken bbq mix. Cover the whole tray in grated cheddar and red Leicester and bake for a further 30 minutes. Remove from oven and drizzle with ranch dressing, Sriracha and spring onion. Serve up your cheesy delicious skins immediately. Seriously good stuff.
