Watermelon Granita (healthy dessert!)

We are making watermelon granita! It has been so hot these past couple of days and when it is too hot to turn on my oven to bake, I like to make granita. Super easy and really tasty.

WATERMELON GRANITA

1 1/2 – 2 lbs seedless watermelon, rind removed and cut into 2 – 3 ” chunks.
1/4 cup simple syrup
2 Tbs. fresh lime juice
handful of fresh mint
Add watermelon, simple syrup, lime juice and mint to a blender. Blend until smooth.

Strain the watermelon juice into a 13″ x 9″ pan. Carefully place the pan into the freezer.

Every 30 minutes for the next 2 hours, remove the granita from the freezer and scrape with a fork until the granita is light and fluffy.

Serves 6 to 8.
