What I Eat In A Day #6 Vegan & Healthy

This is what I ate today. Easy & simple, healthy vegan meals. I hope it gives you some recipe inspiration for you to try out and hopefully love 🙂

For the ChickPea Salad Sandwich:

1/2 cup cooked chickpeas (or rinsed and drained from a can)
1 dill pickle, chopped small
1/3 inch slice red onion, chopped small
1 tsp yellow mustard
salt and pepper
dash tumeric
1 tsp apple cider vinegar (with the mother)

mash chickpeas then add all other ingredients and mix
optional toppings for sandwich : kale & sprouts and any other toppings you like
